Ingredients

  • 500 g Boneless, skinless chicken breasts
  • 3 tbsp Soy sauce
  • 2 tbsp Oyster sauce
  • 2 tbsp Cornstarch
  • 2 tbsp Vegetable oil
  • 2 Garlic cloves, minced
  • 1 tsp Ginger, minced
  • 1 Red bell pepper, sliced
  • 1 Green bell pepper, sliced
  • 2 Spring onions, chopped
  • 1 tsp Sesame oil
  • 0.5 tsp Black pepper
  • 3 tbsp Water
  • 2 cups Cooked white rice (optional, for serving)

Directions

Step 1

Slice the chicken breasts into thin strips and add to a bowl. Marinate with 2 tablespoons of soy sauce and 1 tablespoon of cornstarch. Mix well and let sit for 5 minutes.

Step 2

In a small bowl, mix the remaining 1 tablespoon of soy sauce, oyster sauce, 1 tablespoon of cornstarch, black pepper, sesame oil, and water. Stir until smooth to create the sauce mixture. Set aside.

Step 3

Heat the vegetable oil in a large skillet or wok over medium-high heat.

Step 4

Add the marinated chicken to the skillet and stir-fry for 3-4 minutes until the chicken is golden and cooked through. Remove the chicken from the skillet and set aside.

Step 5

In the same skillet, add the garlic and ginger. Stir-fry for 30 seconds until fragrant.

Step 6

Add the red and green bell peppers to the skillet and stir-fry for 2-3 minutes until slightly tender yet crisp.

Step 7

Return the cooked chicken to the skillet and pour in the sauce mixture. Stir everything together and cook for another 2-3 minutes until the sauce thickens and evenly coats the chicken and vegetables.

Step 8

Remove from heat and garnish with chopped spring onions.

Step 9

Serve hot with cooked white rice if desired.
