  • 1 cup coconut milk (full-fat)
  • 1 tbsp arrowroot powder (optional, for thickening)
  • 1 tsp fresh thyme leaves
  • 1 tsp sea salt
  • 0.5 tsp black pepper, ground
  • 2 tbsp parsley, chopped (for garnish)

Directions

Step 1

Heat 1 tablespoon of coconut oil in a large pot or Dutch oven over medium heat.

Cut the chicken thighs into bite-sized pieces and season lightly with salt and pepper.
