Ingredients

  • 4 whole Bell peppers
  • 6 large Eggs
  • 0.5 cups Milk
  • 1 cup Shredded cheese (cheddar, mozzarella, or a blend)
  • 1 cup Spinach
  • 0.5 cup Cooked bacon or ham (chopped)
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 0.25 cups Onion (finely diced, optional)
  • 1 teaspoon Olive oil or non-stick spray

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Wash the bell peppers and slice off the tops to create 'cups.' Remove the seeds and membranes inside each pepper. Lightly coat the outside of the peppers with olive oil or spray with non-stick spray. Set aside.

In a medium mixing bowl, whisk together the eggs and milk until well combined.

Stir in the shredded cheese, spinach, cooked bacon or ham, salt, black pepper, and onion (if using).
