Ingredients

  • 8 ounces Mexican chorizo
  • 2 cups Shredded Oaxaca cheese
  • 1 cup Shredded Monterey Jack cheese
  • 1 Small white onion
  • 2 Garlic cloves
  • 2 tablespoons Fresh cilantro
  • 0 as needed Tortilla chips or warm tortillas
  • 1 tablespoon Cooking oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Finely dice the white onion and mince the garlic cloves. Chop the fresh cilantro and set aside for garnishing.

Step 3

Heat a cast-iron skillet or oven-safe pan over medium heat. Add the cooking oil and cook the chorizo, breaking it up into small pieces with a wooden spoon, until browned and cooked through, about 6-8 minutes. Use a slotted spoon to transfer the chorizo to a paper towel-lined plate, leaving the rendered fat in the skillet.

Step 4

Add the diced onion to the skillet and sauté until softened, about 3 minutes. Add the minced garlic and cook for another 1 minute, stirring constantly. Remove the skillet from the heat.

Step 5

In a large mixing bowl, combine the shredded Oaxaca cheese and shredded Monterey Jack cheese.

Step 6

Layer half of the cheese mixture into the skillet over the cooked onions and garlic. Add a layer of the cooked chorizo, then top with the remaining cheese.

Step 7

Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the cheese is fully melted and bubbly.

Step 8

Carefully remove the skillet from the oven and sprinkle the queso fundido with the chopped cilantro.

Step 9

Serve immediately with tortilla chips or warm tortillas for dipping. Enjoy this melted cheese delight!
