Ingredients

  • 8 oz Mexican chorizo
  • 1 small White onion, finely diced
  • 1 medium Poblano pepper, diced
  • 2 cloves Garlic cloves, minced
  • 16 oz Shredded Oaxaca or mozzarella cheese
  • 2 tbsp Cilantro, chopped
  • 8 pieces Corn or flour tortillas (optional, for serving)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a cast-iron skillet or oven-safe frying pan, cook the chorizo over medium heat, breaking it up into small pieces as it browns. Cook for about 5-7 minutes or until fully cooked through.

Step 3

Add the diced white onion and diced poblano pepper to the skillet. Sauté for 3-4 minutes, or until the vegetables soften.

Step 4

Stir in the minced garlic and cook for another 30 seconds until fragrant. Remove the skillet from the heat.

Step 5

Spread the shredded Oaxaca or mozzarella cheese evenly over the chorizo and vegetable mixture in the skillet.

Step 6

Transfer the skillet to the preheated oven and bake for 8-10 minutes, or until the cheese is completely melted and bubbly.

Step 7

Optional: for a dramatic finish, carefully place the skillet under the broiler for 1-2 minutes to slightly brown the top of the cheese.

Step 8

Remove the skillet from the oven and let it cool slightly for a minute or two. Sprinkle chopped cilantro on top for a fresh burst of flavor.

Step 9

Serve immediately with warm tortillas or tortilla chips on the side for dipping. Enjoy!
