Ingredients

  • 4 large sweet potatoes
  • 6 tablespoons unsalted butter
  • 1 cup granulated sugar
  • 0.5 cup milk
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 0.5 cup all-purpose flour
  • 0.5 cup brown sugar
  • 1 cup pecans, chopped
  • 4 tablespoons unsalted butter (for topping)
  • 0.25 teaspoon salt
  • 0.5 teaspoon ground cinnamon

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish lightly with butter or non-stick cooking spray.

Step 2

Peel the sweet potatoes and cut them into large chunks. Bring a large pot of water to a boil, add the sweet potato chunks, and cook for about 15-20 minutes, or until fork-tender. Drain and let cool slightly.

Step 3

In a large mixing bowl, mash the cooked sweet potatoes until smooth. Stir in 6 tablespoons of melted butter, granulated sugar, milk, vanilla extract, and salt. Mix well.

Step 4

Add the eggs to the sweet potato mixture and stir until fully incorporated. Pour the mixture into the prepared baking dish and spread it evenly.

Step 5

In a small bowl, prepare the crumble topping by mixing together the flour, brown sugar, chopped pecans, cinnamon, and 4 tablespoons of softened butter. Use a fork to combine until the mixture becomes crumbly.

Step 6

Sprinkle the pecan-crumble topping evenly over the sweet potato mixture in the baking dish.

Step 7

Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown and the casserole is set.

Step 8

Remove the casserole from the oven and let it cool for 5-10 minutes before serving. Enjoy warm as a side or dessert!
