Ingredients

  • 12 pieces egg roll wrappers
  • 2 cups leftover protein (e.g., shredded chicken, pulled pork, diced tofu, or crumbled ground beef)
  • 2 cups leftover vegetables (e.g., cabbage, carrots, bell peppers, or greens - finely chopped or shredded)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon ginger (fresh, grated)
  • 2 cloves garlic (minced)
  • 2 tablespoons green onions (chopped)
  • 1 teaspoon cornstarch
  • 1 teaspoon water
  • 3 cups vegetable oil (for frying)
  • 0 dipping sauce (optional: soy sauce, sweet chili sauce, or any preferred sauce)

Directions

Step 1

In a large bowl, combine your leftover protein and vegetables.

Step 2

Add soy sauce, sesame oil, grated ginger, minced garlic, and chopped green onions to the bowl. Mix well to evenly coat the filling.

Step 3

In a small bowl, whisk together cornstarch and water to form a slurry. This will act as the 'glue' for sealing your egg rolls.

Step 4

Lay an egg roll wrapper on a clean surface, positioning it like a diamond with one point facing you.

Step 5

Scoop about 2 tablespoons of the filling onto the center of the wrapper. Be careful not to overfill.

Step 6

Using your finger or a small brush, apply the cornstarch slurry along the outer edges of the wrapper.

Step 7

Fold the bottom corner over the filling and tuck it snugly. Fold in the left and right corners toward the center to create an envelope shape. Roll the wrapper up tightly toward the top corner to seal. Repeat for the remaining wrappers and filling.

Step 8

Heat the vegetable oil in a deep skillet or pot over medium heat until it reaches 350°F (175°C).

Step 9

Carefully place a few egg rolls into the hot oil, ensuring not to crowd the pan. Fry for 2–3 minutes per side, or until golden brown and crispy.

Step 10

Remove the egg rolls from the oil using a slotted spoon and place them on a paper towel-lined plate to drain excess oil.

Step 11

Repeat with the remaining egg rolls.

Step 12

Serve hot with your favorite dipping sauce on the side. Enjoy!
