Ingredients

  • 600 grams Potatoes
  • 1 large Onion
  • 300 grams Cooked beef or sausage
  • 30 grams Unsalted butter
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 large Eggs
  • 100 grams Pickled beets
  • 1 tablespoon Fresh parsley (optional)

Directions

Step 1

Peel and dice the potatoes into small, even cubes, about 1 cm in size.

Step 2

Peel and finely chop the onion.

Step 3

Cut the cooked beef or sausage into small, bite-sized cubes.

Step 4

Heat half of the butter in a large frying pan over medium heat.

Step 5

Add the diced potatoes to the pan and sauté for 10-12 minutes, stirring occasionally, until they are golden and cooked through.

Step 6

Push the potatoes to one side of the pan and add the remaining butter.

Step 7

Add the chopped onions to the pan and sauté for 3-4 minutes until softened.

Add the diced beef or sausage to the pan and stir everything together. Cook for another 5-7 minutes, allowing the flavors to combine and everything to crisp up slightly.
