  • 24 pieces Wonton wrappers
  • 1 cup Shredded cheddar cheese
  • 0.5 cup (cooked or thawed if using frozen) Corn kernels
  • 0.5 cup (rinsed and drained) Black beans
  • 0.5 cup Diced tomatoes
  • 2 stalks Scallions (green onions), chopped
  • 2 tablespoons (chopped) Cilantro

Directions

Step 1

Preheat the oven to 375°F (190°C) and lightly grease a standard muffin tin.

Cut the chicken breasts into small cubes or strips.

Heat a skillet over medium heat and add the olive oil. Once heated, add the cubed chicken.
