Ingredients

  • 4 pieces boneless skinless chicken breasts
  • 4 slices low-sodium deli turkey slices
  • 4 slices low-fat Swiss cheese slices
  • 1 cup whole-wheat breadcrumbs
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons plain Greek yogurt
  • 1 tablespoon Dijon mustard
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon paprika
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 as needed nonstick cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease a baking sheet with nonstick cooking spray.

Step 2

Place the chicken breasts on a cutting board and carefully butterfly each piece by slicing them horizontally almost all the way through, then opening them like a book.

Step 3

Place a slice of turkey and a slice of Swiss cheese inside each butterflied chicken breast. Fold the chicken back over to enclose the filling and secure it with toothpicks, if necessary.

Step 4

In a shallow bowl, mix the Greek yogurt and Dijon mustard until smooth. In another shallow bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and pepper.

Step 5

Dip each stuffed chicken breast into the yogurt mixture, coating it evenly, and then roll it in the breadcrumb mixture, pressing gently so the crumbs adhere well.

Step 6

Place the breaded chicken breasts on the prepared baking sheet, making sure they are not touching for even cooking.

Step 7

Spray the tops of the chicken breasts lightly with nonstick cooking spray to help them crisp up while baking.

Step 8

Bake in the preheated oven for 25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C), and the coating is golden brown.

Step 9

Remove from the oven and let the chicken rest for 5 minutes before serving. Carefully remove any toothpicks before plating.

Step 10

Serve warm with a side of steamed vegetables or a fresh salad for a complete meal.
