  • 2 sprigs fresh thyme sprigs
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 4 slices crusty bread slices
  • 0.5 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Add the chopped onion, carrot, and celery. Sauté for 5-7 minutes, until softened.
