Ingredients

  • 150 grams all-purpose flour
  • 100 grams granulated sugar
  • 3 large eggs
  • 120 ml coconut milk
  • 100 grams fresh grated coconut
  • 1 teaspoon pandan extract
  • 0.5 teaspoon salt
  • 1 teaspoon baking powder
  • 1 tablespoon vegetable oil
  • 0.5 teaspoon vanilla extract

Directions

Step 1

Prepare the steamer by filling it with water and bringing it to a boil. Lightly grease small cupcake molds or ramekins and set aside.

Step 2

In a small bowl, mix the grated coconut with 1/4 teaspoon of salt. Press a thin layer of this coconut mixture firmly into the bottom of each greased mold, about 1 cm thick. Set aside.

Step 3

In a mixing bowl, beat the eggs and granulated sugar using a hand or stand mixer on high speed until the mixture is pale, thick, and fluffy (approximately 5-7 minutes).

Step 4

Lower the mixer speed to medium and add the pandan extract, vanilla extract, and vegetable oil. Mix until well combined.

Sift together the all-purpose flour, baking powder, and the remaining salt in a separate bowl. Gradually fold the dry mixture into the wet mixture in batches, alternating with coconut milk. Mix gently to avoid deflating the batter.

Place the molds into the prepared steamer and cover with a clean kitchen towel under the lid to prevent steam water from dripping onto the cupcakes.
