Ingredients

  • 3 tablespoons olive oil
  • 6 large, minced garlic cloves
  • 5 pieces anchovy fillets
  • 0.5 teaspoons crushed red pepper flakes
  • 28 ounces, canned diced tomatoes
  • 0.75 cups, roughly chopped pitted black olives
  • 2 tablespoons, rinsed and drained capers
  • 0.25 cups, chopped fresh parsley
  • 1 teaspoon dried oregano
  • 0.5 teaspoons (to taste) salt
  • 0.25 teaspoons (to taste) ground black pepper

Directions

Step 1

Heat the olive oil in a large skillet over medium heat.

Step 2

Add the minced garlic and sauté for 30 seconds until fragrant. Be careful not to burn the garlic.

Step 3

Add the anchovy fillets and crushed red pepper flakes to the skillet. Use a wooden spoon to mash the anchovies until they dissolve into the oil.

Step 4

Stir in the canned diced tomatoes, including the juices, and bring to a simmer. Reduce the heat to low and let it cook for 10 minutes, stirring occasionally.

Step 5

Add the chopped olives, capers, parsley, and oregano to the skillet. Stir well to combine.

Step 6

Season with salt and black pepper to taste, keeping in mind that the anchovies, olives, and capers are naturally salty.

Step 7

Continue to simmer for another 5-8 minutes, allowing the flavors to meld together.

Step 8

Remove the skillet from heat and serve the sauce over your favorite pasta, garnished with extra parsley if desired.
