Ingredients

  • 400 grams spaghetti
  • 3 tablespoons extra-virgin olive oil
  • 4 garlic cloves, minced
  • 6 anchovy fillets, chopped
  • 0.5 teaspoons red chili flakes
  • 400 grams canned whole peeled tomatoes
  • 100 grams black olives, pitted and sliced
  • 2 tablespoons capers, rinsed and drained
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 50 grams parmesan cheese, grated (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the spaghetti and cook until al dente according to package instructions. Reserve 1 cup of pasta water and then drain the pasta.

Step 2

In a large skillet, heat the olive oil over medium heat. Add the minced garlic, anchovy fillets, and red chili flakes. Cook for 1-2 minutes until the garlic is fragrant and the anchovies have melted into the oil.

Step 3

Add the canned tomatoes to the skillet, crushing them with your hands or a spoon as you add them. Stir well and let the sauce cook for 8-10 minutes, allowing it to thicken slightly.

Step 4

Stir in the black olives and capers, cooking for another 2 minutes. Taste the sauce and adjust seasoning with salt and black pepper as needed.

Step 5

Add the drained spaghetti to the skillet and toss to coat in the sauce. If the sauce is too thick, add a little of the reserved pasta water to loosen it.
