Ingredients

  • 400 grams spaghetti
  • 3 tablespoons olive oil
  • 4 garlic cloves, minced
  • 6 anchovy fillets, chopped
  • 0.5 teaspoons red pepper flakes
  • 800 grams canned whole peeled tomatoes
  • 120 grams pitted black olives, sliced
  • 2 tablespoons capers, drained
  • 1 teaspoon dried oregano
  • 2 tablespoons fresh parsley, chopped
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Reserve 1/2 cup of pasta cooking water and then drain the pasta.

Step 2

While the pasta is cooking, heat olive oil in a large skillet over medium heat.

Step 3

Add minced garlic, chopped anchovy fillets, and red pepper flakes to the skillet. Sauté for 2-3 minutes until fragrant and the anchovies have melted into the oil.

Step 4

Crush the canned whole peeled tomatoes with your hands or a fork and add them (with their juices) to the skillet. Stir well to combine.

Step 5

Lower the heat and let the sauce simmer for about 10 minutes, stirring occasionally, until slightly thickened.

Stir in the sliced black olives, drained capers, and dried oregano. Continue to simmer for another 5 minutes.

Taste the sauce and season with salt and black pepper as needed.

Toss the cooked spaghetti with the sauce, adding some of the reserved pasta water if the sauce is too thick.
