Preheat your oven to 375°F (190°C). Line a baking sheet with foil and wrap the beets individually in foil. Roast for 45-60 minutes, or until tender when pierced with a fork. Allow the beets to cool, then peel and puree them in a food processor until smooth.
Reduce the oven temperature to 350°F (175°C). Grease and flour two 8-inch (20 cm) round cake pans and line the bottoms with parchment paper.
In a medium bowl, sift together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
In a large mixing bowl, beat the granulated sugar, brown sugar, and eggs together on medium speed until light and fluffy, about 2 minutes.
Mix in the vegetable oil and vanilla extract until combined, then add the beet puree and mix until evenly incorporated.
