Ingredients

  • 2 tablespoons olive oil
  • 1 large yellow onion (chopped)
  • 4 cloves garlic cloves (minced)
  • 1 medium jalapeño (seeded and chopped)
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 3 cups tomatoes (diced, canned or fresh)
  • 4 cups vegetable broth
  • 4 small corn tortillas (cut into strips)
  • 2 tablespoons lime juice
  • 1 teaspoon salt
  • 0.5 teaspoon pepper
  • 2 tablespoons fresh cilantro (chopped, for garnish)
  • 1 medium avocado (sliced, for garnish)
  • 1 cup tortilla chips (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the chopped onion, minced garlic, and chopped jalapeño to the pot. Sauté for 5 minutes or until the onion becomes translucent.

Step 3

Stir in the ground cumin, smoked paprika, and oregano. Cook for 1 minute to toast the spices.

Step 4

Add the diced tomatoes, vegetable broth, and tortilla strips to the pot. Stir well to combine.

Step 5

Bring the mixture to a boil, then reduce the heat to low. Simmer for 20 minutes, stirring occasionally.

Step 6

Remove the pot from heat and let the soup cool slightly. Use an immersion blender to puree the soup until smooth. Alternatively, transfer the soup in batches to a countertop blender and puree, then return it to the pot.

Step 7

Stir in the lime juice, salt, and pepper. Taste and adjust seasoning as needed.

Step 8

Ladle the soup into bowls and garnish with chopped cilantro, sliced avocado, and optional tortilla chips for added texture and crunch.

Step 9

Serve warm and enjoy your Pureed Tortilla Soup!
