Ingredients

  • 2 pounds carrots
  • 1 medium yellow onion
  • 3 cloves garlic
  • 1 tablespoon fresh ginger
  • 2 tablespoons olive oil
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 0.5 teaspoon ground cumin
  • 2 tablespoons fresh parsley

Directions

Step 1

Wash and peel the carrots, then slice them into thin rounds.

Step 2

Dice the onion and mince the garlic and ginger.

Step 3

In a large pot, heat the olive oil over medium heat.

Add the diced onion and sauté for about 3-4 minutes, until softened and translucent.

Stir in the garlic and ginger, and cook for an additional minute until fragrant.
