Preheat your oven to 400°F (200°C).
Thoroughly wash the beets under running water to remove dirt. Pat them dry with a paper towel.
Wrap each beet individually in aluminum foil and place them on a baking sheet.
Roast the beets in the oven for 45-50 minutes or until a knife slides into the beets easily, indicating they are tender.
While the beets are roasting, prepare the other ingredients. Mince the garlic and measure the yogurt, zaatar, olive oil, lemon juice, salt, and pepper.
Once the beets are done roasting, remove them from the oven and allow them to cool slightly until they are safe to handle.
Peel the beets by rubbing their skins off under running water or using a paper towel. The skins should come off easily.
Roughly chop the peeled beets and transfer them to a food processor or blender.
Add the olive oil, minced garlic, Greek yogurt, zaatar, lemon juice, salt, and black pepper to the food processor.
Blend the mixture until smooth and creamy, scraping down the sides as needed. Taste and adjust seasoning if necessary.
Transfer the beet puree to a serving bowl. If desired, garnish with extra zaatar, a drizzle of olive oil, and a sprinkle of fresh parsley for added color and flavor.
Serve immediately as a side dish or dip, or refrigerate for up to 2 days and serve chilled.
