Ingredients

  • 6 slices bacon
  • 2 tablespoons butter
  • 1 medium (diced) yellow onion
  • 2 minced garlic cloves
  • 4 large (chopped) ripe tomatoes
  • 4 cups chicken broth
  • 1 head (chopped) butter lettuce
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 0.5 teaspoons paprika
  • 6 large (plus extra for garnish) fresh basil leaves

Directions

Step 1

In a large pot, cook the bacon over medium heat until crispy. Remove the bacon and place it on a plate lined with paper towels to drain. Reserve 1 tablespoon of bacon grease in the pot and discard the rest.

Step 2

Add the butter to the pot with the bacon grease. Once melted, add the diced onion and cook for 5-7 minutes, stirring occasionally, until softened.

Step 3

Stir in the minced garlic and cook for an additional minute until fragrant.

Step 4

Add the chopped tomatoes, chicken broth, chopped butter lettuce, salt, black pepper, and paprika to the pot. Stir to combine and bring the mixture to a boil.

Step 5

Reduce the heat to low, cover the pot, and let the soup simmer for 15 minutes, allowing the flavors to meld together.

Step 6

Carefully transfer the soup to a blender in batches, or use an immersion blender directly in the pot, and puree until smooth.

Step 7

Return the pureed soup to the pot and stir in the heavy cream and fresh basil leaves. Simmer for 5 additional minutes over low heat.

Step 8

Taste the soup and adjust seasoning if needed. Crumble the reserved bacon and stir half of it into the soup.

Step 9

Serve the soup hot, garnished with the remaining crumbled bacon and extra basil leaves.
