  • 300 grams parsnips
  • 300 grams sweet potatoes
  • 50 grams unsalted butter
  • 100 milliliters heavy cream
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 teaspoon fresh thyme (optional)

Directions

Step 1

Peel and chop the carrots, parsnips, and sweet potatoes into roughly 1-inch cubes for even cooking.

Step 2

Place the chopped vegetables in a large pot and fill with enough water to cover them. Add a pinch of salt to the water.

Step 3

Bring the water to a boil over medium-high heat, then reduce the heat to a simmer. Cook the vegetables for 20-25 minutes, or until they are tender and can be easily pierced with a fork.
