Ingredients

  • 4 medium-sized raw beets
  • 1 medium-sized carrot
  • 1 medium-sized yellow onion
  • 2 pieces garlic cloves
  • 100 grams rolled oats
  • 3 tablespoons all-purpose flour
  • 1 large egg
  • 0.5 teaspoons ground black pepper
  • 1 teaspoon salt
  • 0.5 teaspoons ground cumin
  • 2 tablespoons fresh parsley
  • 2 tablespoons vegetable oil

Directions

Step 1

Wash and peel the beets, carrot, and onion. Grate the beets and carrot using a box grater or food processor with a grating attachment.

Step 2

Finely chop the yellow onion and mince the garlic cloves.

Step 3

In a large mixing bowl, combine the grated beets, grated carrot, chopped onion, minced garlic, and rolled oats.

Step 4

Add the flour, egg, ground black pepper, salt, ground cumin, and freshly chopped parsley. Mix the ingredients thoroughly with your hands or a spoon until well combined.

Step 5

Shape the mixture into small, round patties about 1 cm thick. You should end up with 8-10 patties, depending on their size.

Step 6

Heat the vegetable oil in a large frying pan over medium heat.

Step 7

Fry the patties in batches for about 4-5 minutes on each side, or until they are golden brown and crispy on the outside.

Step 8

Transfer the cooked patties to a plate lined with paper towels to remove excess oil.

Step 9

Serve the Punajuuripihvit warm with a side of mashed potatoes, sour cream, or a fresh green salad.
