Ingredients

  • 2 eggs
  • 1 cup canned pumpkin purée
  • 1 cup grated zucchini (squeezed to remove excess moisture)
  • 0.5 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 0.5 cup chopped walnuts or pecans (optional)
  • 0.5 cup chocolate chips (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper.

In a medium-sized bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger. Set aside.
