Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1.5 teaspoons ground cinnamon
  • 0.5 teaspoons ground nutmeg
  • 0.5 teaspoons salt
  • 0.5 cups unsalted butter, melted
  • 0.75 cups brown sugar, packed
  • 0.5 cups granulated sugar
  • 0.75 cups pure pumpkin puree
  • 2 teaspoons vanilla extract
  • 1.5 cups white chocolate chips

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2

In a medium-sized mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt. Set aside.

Step 3

In a large mixing bowl, combine the melted butter, brown sugar, and granulated sugar. Whisk until well combined and smooth.

Step 4

Stir in the pumpkin puree and vanilla extract until evenly incorporated.

Step 5

Gradually add the dry ingredients to the wet mixture, stirring with a spatula or wooden spoon until combined. Do not overmix.

Step 6

Fold in the white chocolate chips until evenly distributed throughout the dough.

Step 7

Using a tablespoon or cookie scoop, drop rounded spoonfuls of the dough onto the prepared baking sheets, spacing them about 2 inches apart.

Step 8

Bake in the preheated oven for 10-12 minutes, or until the edges are set and the centers look slightly soft. Avoid overbaking as the cookies will continue to set as they cool.

Step 9

Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Serve the cookies warm or at room temperature. Store leftovers in an airtight container at room temperature for up to 5 days.
