Ingredients

  • 170 grams unsalted butter
  • 100 grams granulated sugar
  • 150 grams brown sugar
  • 120 grams canned pumpkin puree
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 250 grams all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon salt
  • 120 grams walnuts, chopped
  • 200 grams powdered sugar
  • 2 tablespoons milk

Directions

Step 1

Preheat your oven to 175°C (350°F) and line two baking sheets with parchment paper.

Step 2

In a medium saucepan, melt 85 grams of butter over medium heat, stirring frequently. Continue to cook until the butter turns golden brown and smells nutty, then remove from heat. Pour 85 grams of the browned butter (reserving the rest for the frosting) into a large mixing bowl and let it cool slightly.

Once the browned butter has cooled, whisk in the granulated sugar, brown sugar, canned pumpkin puree, egg, and vanilla extract until well combined.

In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.
