Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 1.5 teaspoons ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 0.5 cup brown sugar, packed
  • 1 cup pumpkin puree
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 1 cup chopped walnuts

Directions

Step 1

Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper or silicone baking mats.

Step 2

In a medium-sized bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.

Step 3

In a large mixing bowl, use an electric mixer to cream the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.

Step 4

Add the pumpkin puree, egg, and vanilla extract to the butter mixture. Beat until well combined, scraping down the sides of the bowl as needed.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing at low speed until just combined. Be careful not to overmix.

Step 6

Fold in the chopped walnuts using a spatula until evenly distributed in the dough.

Step 7

Drop rounded tablespoons of dough onto the prepared baking sheets, leaving about 2 inches of space between each cookie to allow for spreading.

Step 8

Bake in the preheated oven for 10-12 minutes, or until the edges of the cookies are lightly golden and the tops appear set.

Step 9

Remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.

Step 10

Enjoy your Pumpkin Walnut Cookies with a cup of tea, coffee, or a glass of milk. Store leftover cookies in an airtight container at room temperature for up to 5 days.
