Ingredients

  • 250 grams All-purpose flour
  • 125 grams Unsalted butter, cold and cubed
  • 1 teaspoon Salt
  • 4 tablespoons Ice water
  • 425 grams Canned pumpkin puree
  • 150 grams Brown sugar
  • 115 grams Cream cheese, softened
  • 2 large Eggs
  • 120 milliliters Heavy cream
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground ginger
  • 0.25 teaspoon Ground nutmeg
  • 0.25 teaspoon Ground cloves
  • 0 Whipped cream (optional, for topping)
  • 0 Powdered sugar (optional, for dusting)

Directions

Step 1

Preheat the oven to 180°C (350°F).

Step 2

In a large mixing bowl, combine the flour and salt. Add the cold, cubed butter and use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.

Step 3

Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 20 minutes.
