Ingredients

  • 300 grams Pumpkin (peeled and diced)
  • 2 tablespoons Olive oil
  • 100 grams Baby spinach
  • 8 Eggs
  • 100 grams Feta cheese (crumbled)
  • 2 tablespoons Fresh parsley (chopped)
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 50 milliliters Milk
  • 1 clove Garlic (minced)

Directions

Step 1

Preheat your oven to 200°C (390°F).

Step 2

Place the diced pumpkin on a baking tray, drizzle with 1 tablespoon of olive oil, and toss to coat evenly. Roast in the oven for 20 minutes, or until tender and lightly caramelized.

Step 3

While the pumpkin is roasting, heat the remaining 1 tablespoon of olive oil in an oven-safe skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes, until fragrant.

Add the baby spinach to the skillet and cook for 2-3 minutes until wilted. Remove from heat and set aside.
