  • 3 minced Garlic cloves
  • 2 tablespoons Olive oil
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Ground cinnamon
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 cup Fresh cranberries
  • 1 medium, peeled and diced Apple
  • 2 tablespoons Honey
  • 0.5 teaspoon Red chili flakes
  • 1 tablespoon Lemon juice
  • 2 tablespoons, chopped Fresh parsley

Directions

Step 1

Heat olive oil in a large pot over medium heat. Add diced onion and cook until softened, about 4-5 minutes.

Step 2

Add minced garlic and cook for another minute until fragrant.

Step 3

Stir in ground cumin, ground cinnamon, salt, and black pepper. Cook for 30 seconds to toast the spices.

Add pumpkin puree and vegetable stock to the pot. Stir well to combine and bring the mixture to a boil.

Reduce heat to low and simmer for 15-20 minutes, stirring occasionally.
