Ingredients

  • 2 large yams
  • 0.5 cup pumpkin seeds
  • 0.25 cup all-purpose flour
  • 1 large egg
  • 2 stalks scallions
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 3 tablespoons olive oil

Directions

Step 1

Peel and roughly chop the yams into 1-inch pieces. Place them in a pot of boiling salted water and cook for about 12–15 minutes, or until they are fork-tender. Drain the yams and set aside to cool slightly.

Step 2

While the yams are cooling, toast the pumpkin seeds in a dry skillet over medium heat. Stir frequently until they turn golden and start to pop, about 3–4 minutes. Remove from heat and chop the pumpkin seeds coarsely.

Step 3

Mash the cooled yams in a large mixing bowl until mostly smooth (a few small lumps are fine for texture).

Finely chop the scallions and add them to the mashed yams, along with the toasted pumpkin seeds, flour, egg, garlic powder, ground cumin, salt, and black pepper. Mix until all the ingredients are well combined and form a sticky dough.
