Ingredients

  • 1 cup raw pumpkin seeds (pepitas)
  • 1 cup fresh cilantro leaves
  • 2 garlic cloves
  • 1 jalapeño pepper
  • 2 tablespoons fresh lime juice
  • 2 tablespoons olive oil
  • 1 cup water
  • 1 teaspoon kosher salt
  • 1 teaspoon ground cumin
  • 0.5 teaspoon ground coriander

Directions

Step 1

Heat a dry skillet over medium heat. Add the raw pumpkin seeds and toast them for 3-5 minutes, stirring frequently, until they are golden and start to pop. Remove from heat and let cool slightly.

Step 2

In a food processor or blender, combine the toasted pumpkin seeds, cilantro, garlic cloves, and jalapeño pepper (stem and seeds removed for a milder salsa, or keep the seeds for extra spice). Pulse until roughly chopped.

Step 3

Add the fresh lime juice, olive oil, water, kosher salt, ground cumin, and ground coriander to the food processor. Blend until smooth, scraping down the sides as needed. Add more water, one tablespoon at a time, if the salsa is too thick.

Step 4

Taste and adjust seasoning, adding more salt or lime juice as desired.

Step 5
