Ingredients

  • 800 grams Pumpkin
  • 40 grams Butter
  • 2 cloves Garlic
  • 1 teaspoon Fresh thyme leaves
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 tablespoons Heavy cream
  • 1 tablespoon Olive oil
  • 1 tablespoon Chives (for garnish)

Directions

Step 1

Prepare the pumpkin by peeling, deseeding, and cutting it into 2-inch cubes.

Peel and finely mince the garlic cloves.

In a large pot, bring water to a boil and add a pinch of salt. Add the pumpkin cubes and cook for 15-20 minutes, or until they are fork-tender.
