Ingredients

  • 1 cup polenta (coarse cornmeal)
  • 3 cups water
  • 1 cup milk
  • 1 cup pumpkin puree
  • 1 tablespoon sage leaves (fresh, finely chopped)
  • 2 tablespoons unsalted butter
  • 1 cup Parmesan cheese (grated)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper (freshly ground)
  • 1 teaspoon olive oil
  • 4 whole sage leaves (for garnish)

Directions

Step 1

In a medium saucepan over medium-high heat, bring the water and milk to a gentle boil.

Step 2

Gradually whisk in the polenta, stirring continuously to prevent lumps.

Step 3

Lower the heat to medium-low and cook the polenta, stirring frequently, for about 15 minutes or until thickened.

Step 4

Stir in the pumpkin puree, chopped sage, butter, Parmesan cheese, salt, and black pepper. Mix well until everything is fully incorporated.

Step 5

Allow the polenta to simmer on low heat for an additional 5 minutes, stirring occasionally to maintain a creamy texture.

Step 6

Meanwhile, heat olive oil in a small skillet over medium heat. Add the whole sage leaves and fry them for 30 seconds to 1 minute until crispy. Remove and set aside on a paper towel to drain excess oil.

Step 7

Serve the polenta warm, garnished with the crispy sage leaves and an extra sprinkle of grated Parmesan cheese, if desired.
