Ingredients

  • 1 cup Arborio rice
  • 2 cups Water
  • 1 cup Pumpkin puree
  • 3 cups Whole milk
  • 0.5 cup Brown sugar
  • 0.25 cup Granulated sugar
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Cinnamon
  • 0.25 teaspoon Ground nutmeg
  • 0.25 teaspoon Salt
  • 2 tablespoons Unsalted butter
  • 0.5 cup Raisins (optional)
  • 0 as needed Whipped cream (optional, for serving)

Directions

Step 1

In a medium-sized saucepan, bring 2 cups of water to a boil. Add the Arborio rice and reduce the heat to low. Cover and simmer for 10-12 minutes, or until the water is mostly absorbed.

Step 2

Once the rice has absorbed the water, stir in the pumpkin puree, whole milk, brown sugar, granulated sugar, vanilla extract, cinnamon, nutmeg, and salt. Mix until well combined.

Cook the mixture over medium-low heat, stirring frequently to prevent the rice from sticking to the bottom of the pan. Continue cooking for 25-30 minutes, or until the rice pudding thickens to your desired consistency. The rice should be soft and creamy.
