Ingredients

  • 1 cup Pumpkin puree
  • 2 cups Whole milk
  • 0.5 cup Granulated sugar
  • 3 tablespoons Cornstarch
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground ginger
  • 0.25 teaspoon Ground nutmeg
  • 0.25 teaspoon Salt
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Unsalted butter
  • 0 as desired for topping Whipped cream

Directions

Step 1

In a medium saucepan, combine the pumpkin puree, whole milk, granulated sugar, cornstarch, ground cinnamon, ground ginger, ground nutmeg, and salt.

Step 2

Whisk the mixture together until smooth and all the cornstarch is completely dissolved.

Step 3

Place the saucepan over medium heat and cook, stirring constantly, until the mixture begins to thicken. This should take about 10-12 minutes.

Step 4

Once the pudding has thickened, lower the heat to medium-low and continue cooking for another 2-3 minutes while still stirring to prevent sticking.

Step 5

Remove the saucepan from the heat and stir in the vanilla extract and unsalted butter until fully incorporated and the pudding is glossy.

Step 6

Pour the pudding into serving bowls or ramekins and let it cool to room temperature. If desired, cover the dishes with plastic wrap to prevent a skin from forming on the surface.

Step 7

Once cooled, chill the pudding in the refrigerator for at least 2 hours to allow it to fully set.

Step 8

Before serving, add a dollop of whipped cream on top for a creamy finish and sprinkle with a pinch of cinnamon or nutmeg, if desired.

Step 9

Serve chilled and enjoy!
