  • 1 pound boneless pork chops

  • 3 cloves garlic cloves, minced
  • 3 cups golden potatoes, diced
  • 1 cup canned pumpkin puree (not pumpkin pie filling)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon fresh thyme leaves
  • 0.25 teaspoons ground nutmeg
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Cut the pork into bite-sized pieces and season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Add the pork to the pot and sear until browned on all sides, about 5-6 minutes. Remove the pork and set aside on a plate.

Add the diced onion to the pot and sauté for 4-5 minutes, or until translucent. Stir in the minced garlic and cook for another minute, or until fragrant.
