Ingredients

  • 2 cups Rolled oats
  • 1 cup Pumpkin puree
  • 0.5 cup Almond butter (or peanut butter)
  • 0.33333 cup Maple syrup
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.5 teaspoon Ground ginger
  • 0.25 teaspoon Salt
  • 0.5 cup Chopped pecans
  • 0.5 cup Dried cranberries
  • 0.25 cup Pumpkin seeds (pepitas)
  • 0.25 cup Mini chocolate chips (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal.

Step 2

In a large mixing bowl, combine the rolled oats, ground cinnamon, ground nutmeg, ground ginger, and salt. Stir well to evenly distribute the spices.

Step 3

In a medium-sized bowl, mix together the pumpkin puree, almond butter, maple syrup, and vanilla extract until smooth and fully combined.

Step 4

Pour the wet ingredients into the bowl with the dry ingredients. Stir until everything is evenly coated and forms a cohesive mixture.

Step 5

Fold in the chopped pecans, dried cranberries, pumpkin seeds, and mini chocolate chips (if using). Ensure these mix-ins are evenly distributed throughout the mixture.

Step 6

Transfer the mixture to the prepared baking pan. Press it down firmly and evenly using a spatula or the back of a spoon. This step is important to ensure the bars hold their shape when baked.

Step 7

Bake in the preheated oven for 22-25 minutes, or until the edges are lightly golden and the center feels set but slightly soft.

Step 8

Remove the pan from the oven and allow the granola bars to cool completely in the pan. Once cooled, use the parchment paper overhang to lift them out of the pan.

Step 9

Slice the granola bars into 12 even pieces. Store them in an airtight container at room temperature for up to 5 days, or in the refrigerator for up to 2 weeks.
