Ingredients

  • 400 grams penne pasta
  • 300 grams pumpkin
  • 2 tablespoons olive oil
  • 2 whole garlic cloves
  • 50 grams fresh basil leaves
  • 50 grams parmesan cheese
  • 30 grams pine nuts
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 100 milliliters heavy cream
  • 1 cup water

Directions

Step 1

Preheat your oven to 200°C (400°F). Line a baking sheet with parchment paper.

Step 2

Peel and dice the pumpkin into 1-inch cubes. Toss them with 1 tablespoon of olive oil, a pinch of salt, and black pepper. Spread evenly on the baking sheet and roast for 20-25 minutes or until tender and lightly caramelized.

Step 3

While the pumpkin roasts, cook the penne pasta in a large pot of salted boiling water according to package instructions until al dente. Reserve 1 cup of pasta water before draining the pasta.

Step 4

In a food processor, combine the roasted pumpkin, basil leaves, parmesan cheese, pine nuts, garlic cloves, lemon juice, and the remaining 1 tablespoon of olive oil. Blend until smooth and creamy.
