Ingredients

  • 12 oz Pasta (such as fettuccine or rigatoni)
  • 2 tbsp Olive oil
  • 8 oz Italian sausage (casings removed)
  • 8 oz Wild mushrooms (such as cremini, shiitake, or chanterelles), cleaned and sliced
  • 3 Garlic cloves, minced
  • 1 cup Canned pumpkin puree
  • 1 cup Heavy cream
  • 1 cup Chicken or vegetable broth
  • 1 cup Parmesan cheese, grated
  • 0.25 tsp Ground nutmeg
  • 0 to taste Salt
  • 0 to taste Black pepper
  • 2 tbsp Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set it aside.

Step 2

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the Italian sausage, breaking it into small pieces with a wooden spoon, and cook until browned and fully cooked, about 5-7 minutes. Transfer the cooked sausage to a plate and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the sliced wild mushrooms and cook until they are golden and tender, about 5-6 minutes. Season lightly with salt and pepper, then stir in the minced garlic and cook for 1 more minute. Remove the mushrooms from the skillet and set aside with the sausage.

Step 4

Reduce the heat to medium-low and add the canned pumpkin puree, heavy cream, and chicken or vegetable broth to the skillet. Stir well to combine, then add the grated Parmesan cheese and ground nutmeg. Simmer for 2-3 minutes, allowing the sauce to thicken slightly.

Return the sausage and mushrooms to the skillet, stirring to coat them in the sauce. Add the cooked pasta to the skillet and toss to combine. If the sauce is too thick, add a splash of the reserved pasta water until your desired consistency is achieved.

Taste the pasta and adjust seasoning with additional salt and black pepper if needed.
