Ingredients

  • 12 oz Fettuccine (or pasta of your choice)
  • 1 cup Pumpkin purée (unsweetened)
  • 1 cup Heavy cream
  • 0.5 cup Parmesan cheese, grated

  • 2 Garlic cloves, minced
  • 2 tbsp Fresh sage leaves, chopped (optional)
  • 0.25 tsp Ground nutmeg
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 1 tbsp Olive oil (for garnish)
  • 0.5 cup Pasta water (reserved)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente, then drain, reserving 1/2 cup of pasta water.

In a large skillet over medium heat, melt the butter. Add the minced garlic and chopped sage (if using) and sauté for 1-2 minutes until fragrant.

Stir in the pumpkin purée, heavy cream, and grated Parmesan cheese. Mix well until smooth and creamy.
