  • 0.5 cups pumpkin puree (not pumpkin pie filling)
  • 1 egg yolk (large)
  • 1 teaspoon vanilla extract
  • 1 cup butterscotch chips

Directions

Step 1

Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.

In a medium bowl, whisk together the flour, oats, baking soda, cinnamon, nutmeg, ginger, and salt. Set aside.
