  • 0.5 teaspoon Salt
  • 1 cup Pumpkin purée (not pie filling)
  • 0.5 cup Unsulphured molasses
  • 0.75 cup Brown sugar, packed
  • 0.5 cup Vegetable oil
  • 2 Large eggs
  • 0.25 cup Whole milk or buttermilk
  • 1 teaspoon Vanilla extract
  • 0.5 cup Chopped pecans or walnuts (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners or lightly grease the cups.

In a large mixing bowl, whisk together the all-purpose flour, baking soda, baking powder, cinnamon, ginger, nutmeg, and salt.

In a separate medium bowl, combine the pumpkin purée, molasses, brown sugar, vegetable oil, eggs, milk or buttermilk, and vanilla extract. Whisk until smooth and fully combined.
