Ingredients

  • 12 cups (cubed, day-old) Challah bread
  • 1 cup Pumpkin puree
  • 2 cups Milk
  • 1 cup Heavy cream
  • 4 large Eggs
  • 0.5 cup Maple syrup
  • 0.25 cup Brown sugar
  • 2 teaspoons Vanilla extract
  • 1.5 teaspoons Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.25 teaspoon Ground ginger
  • 0.25 teaspoon Salt
  • 1 tablespoon (for greasing pan) Butter
  • 1 tablespoon (optional, for garnish) Powdered sugar
  • 0.25 cup (optional, for serving) Maple syrup

Directions

Step 1

Preheat your oven to 350°F (175°C). Lightly grease a 9x13-inch baking dish with 1 tablespoon of butter and set aside.

Step 2

Cut the challah bread into 1-inch cubes if not already prepared, and spread the cubes evenly across the prepared baking dish.

Step 3

In a large mixing bowl, whisk together the pumpkin puree, milk, heavy cream, eggs, 1/2 cup maple syrup, brown sugar, vanilla extract, cinnamon, nutmeg, ginger, and salt until fully combined and smooth.

Step 4

Pour the pumpkin custard mixture evenly over the bread cubes, pressing the bread gently with a spatula to ensure the liquid is absorbed. Let stand for 10 minutes to allow the bread to soak up the custard.

Step 5

Place the baking dish in the preheated oven and bake for 45-50 minutes, or until the top is golden brown and a knife inserted in the center comes out mostly clean.

Step 6

Remove the bread pudding from the oven and let it cool for at least 10 minutes before serving.

Step 7

If desired, dust the top with powdered sugar and drizzle with additional maple syrup before serving.
