  • 1.5 cups all-purpose flour
  • 1 cup old-fashioned oats
  • 0.75 cup light brown sugar
  • 0.5 cup unsalted butter, melted
  • 1 cup pumpkin puree
  • 0.5 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon ground ginger
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon baking soda
  • 0.25 teaspoon salt
  • 0.5 cup white chocolate chips
  • 0.5 cup chopped pecans

Directions

Step 1

Preheat your oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.

Step 2

In a medium bowl, combine the flour, oats, and brown sugar. Mix well.

Step 3

Pour the melted butter into the dry ingredients and stir until the mixture is crumbly. Reserve 3/4 cup of this mixture for topping.

Press the remaining crumb mixture firmly into the bottom of the prepared baking pan to form the crust.
