Ingredients

  • 1 kg Pumpkin
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 300 ml Heavy cream
  • 2 cloves Garlic
  • 100 grams Parmesan cheese, grated
  • 50 grams Breadcrumbs
  • 0.25 teaspoon Nutmeg, freshly grated
  • 1 teaspoon Thyme, fresh

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Peel and remove the seeds from the pumpkin. Cut the flesh into thin slices, approximately 1/4 inch thick.

Step 3

In a large bowl, toss the pumpkin slices with olive oil, salt, and black pepper. Set aside.

Step 4

Peel and finely mince the garlic cloves.

Step 5

In a saucepan over medium heat, combine the heavy cream, minced garlic, and freshly grated nutmeg. Heat until the cream is warm but not boiling, then remove from heat.

Lightly grease a baking dish with olive oil or butter. Arrange half of the pumpkin slices in a single layer on the bottom of the dish.
