Ingredients

  • 3 cups Rolled oats
  • 1 cup Raw pecans
  • 1 cup Pumpkin seeds
  • 0.5 cup Shredded coconut (optional)
  • 0.5 cup Pumpkin puree (unsweetened)
  • 0.3 cup Maple syrup
  • 0.25 cup Coconut oil (melted)
  • 2 teaspoons Vanilla extract
  • 2 teaspoons Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.5 teaspoon Ground ginger
  • 0.5 teaspoon Salt
  • 0.5 cup Dried cranberries or raisins (optional)

Directions

Step 1

Preheat your oven to 325°F (165°C) and line a large baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the rolled oats, raw pecans, pumpkin seeds, and shredded coconut (if using).

Step 3

In a separate bowl, whisk together the pumpkin puree, maple syrup, melted coconut oil, vanilla extract, cinnamon, nutmeg, ginger, and salt until smooth.

Step 4

Pour the wet mixture over the dry ingredients and stir thoroughly until all the oats and nuts are evenly coated.

Step 5

Spread the granola mixture in an even layer onto the prepared baking sheet.

Step 6

Bake for 25-30 minutes, stirring halfway through to ensure even toasting. Keep an eye on the granola during the last 5 minutes to prevent burning.

Step 7

Remove the granola from the oven and let it cool completely on the baking sheet. It will crisp up as it cools.

Step 8

Once cool, stir in the dried cranberries or raisins if desired.

Step 9

Store the granola in an airtight container at room temperature for up to 2 weeks. Enjoy it with yogurt, milk, or as a snack!
