Ingredients

  • 1.5 cups almond flour
  • 2 tablespoons coconut flour
  • 1 cup pumpkin puree
  • 2 large eggs
  • 0.5 cup coconut sugar
  • 2 tablespoons unsweetened almond milk
  • 2 tablespoons molasses
  • 2 tablespoons coconut oil
  • 1 teaspoon vanilla extract
  • 1.5 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground cloves
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon sea salt

Directions

Step 1

Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper, leaving some overhang for easy removal.

Step 2

In a large mixing bowl, combine the almond flour, coconut flour, ground ginger, ground cinnamon, ground cloves, baking soda, and sea salt. Whisk together until the dry ingredients are evenly incorporated.

Step 3

In a separate medium bowl, whisk together the pumpkin puree, eggs, coconut sugar, almond milk, molasses, melted coconut oil, and vanilla extract until smooth and well combined.

Step 4

Pour the wet ingredients into the bowl with the dry ingredients. Stir with a spatula or wooden spoon until a thick, uniform batter forms.

Step 5

Transfer the batter to the prepared baking dish. Smooth it into an even layer using the back of a spoon or an offset spatula.

Step 6

Bake in the preheated oven for 22-25 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.

Step 7

Remove the baking dish from the oven and allow the bars to cool completely in the dish before lifting them out using the parchment paper overhang.

Step 8

Once cooled, slice into 9 equal bars and serve. Store leftovers in an airtight container at room temperature for up to 2 days or in the refrigerator for up to 5 days.
