Ingredients

  • 1.75 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1.5 teaspoons Ground cinnamon
  • 1 teaspoon Ground ginger
  • 0.5 teaspoons Ground nutmeg
  • 0.25 teaspoons Ground cloves
  • 0.5 teaspoons Salt
  • 0.5 cups Unsalted butter (softened)
  • 0.75 cups Brown sugar (packed)
  • 0.25 cups Granulated sugar
  • 1 cups Pumpkin puree
  • 0.25 cups Molasses
  • 1 Large egg
  • 1 teaspoons Vanilla extract
  • 0.25 cups Powdered sugar (for topping, optional)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and line a 9x9-inch baking pan with parchment paper, leaving some overhang on the sides to easily lift the bars later.

Step 2

In a medium bowl, whisk together the flour, baking soda, cinnamon, ginger, nutmeg, cloves, and salt. Set aside.

Step 3

In a large mixing bowl, use an electric mixer to beat the softened butter, brown sugar, and granulated sugar together until light and fluffy (about 2-3 minutes).

Step 4

Add the pumpkin puree, molasses, egg, and vanilla extract to the butter mixture. Mix until well combined. The batter may look slightly curdled at this point, but that’s okay.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.

Pour the batter into the prepared pan and smooth the top with a spatula.
