Ingredients

  • 500 grams pumpkin (peeled, seeded, and diced)
  • 2 tablespoons fresh ginger (grated)
  • 1 medium onion (finely chopped)
  • 120 milliliters apple cider vinegar
  • 100 grams brown sugar
  • 50 grams raisins
  • 0.5 teaspoons ground cinnamon
  • 0.25 teaspoons ground nutmeg
  • 0.25 teaspoons ground cloves
  • 1 teaspoons salt
  • 1 tablespoons vegetable oil
  • 100 milliliters water

Directions

Step 1

Heat the vegetable oil in a large saucepan over medium heat.

Step 2

Add the finely chopped onion and grated ginger to the pan. Sauté for 3-4 minutes, or until the onion becomes soft and translucent.

Step 3

Stir in the diced pumpkin and cook for another 5 minutes, occasionally stirring to ensure it doesn't stick.

Step 4

Pour in the apple cider vinegar and water, then add the brown sugar, raisins, ground cinnamon, nutmeg, cloves, and salt. Stir well to combine all the ingredients.

Step 5

Bring the mixture to a boil, then reduce the heat to low. Cover the pan and let the chutney simmer for 35-40 minutes, stirring occasionally, until the pumpkin is soft and begins to break down.

Remove the lid and continue cooking for another 5-10 minutes to allow the chutney to thicken. Use a wooden spoon to gently mash some of the pumpkin pieces for a smoother consistency, if desired.
