Ingredients

  • 1.5 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 3 tablespoons Granulated sugar
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Nutmeg
  • 0.5 teaspoon Salt
  • 1 cup Pumpkin puree
  • 0.5 cup Milk
  • 1 teaspoon Vanilla extract
  • 1 large Egg
  • 2 cups Vegetable oil
  • 4 tablespoons Butter
  • 1 cup Brown sugar
  • 0.5 cup Heavy cream
  • 1 teaspoon Vanilla extract (for caramel sauce)
  • 0.25 teaspoon Salt (for caramel sauce)
  • 2 tablespoons Powdered sugar (for dusting)

Directions

Step 1

In a large bowl, whisk together the flour, baking powder, granulated sugar, cinnamon, nutmeg, and salt.

Step 2

In another bowl, combine the pumpkin puree, milk, vanilla extract, and egg. Mix until smooth.

Step 3

Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Avoid overmixing.

Step 4

Heat the vegetable oil in a deep skillet or pan to 350°F (175°C). Use a thermometer to ensure the oil stays at the correct temperature.

Step 5

Using a tablespoon or cookie scoop, drop small portions of the batter into the hot oil. Fry 4-5 fritters at a time to avoid crowding.

Step 6

Cook the fritters for 2-3 minutes on each side, or until golden brown. Use a slotted spoon to transfer the fritters to a paper towel-lined plate to drain excess oil.

Step 7

To make the caramel sauce, melt the butter in a small saucepan over medium heat. Stir in the brown sugar and cook until dissolved, about 2 minutes.

Step 8

Slowly add the heavy cream, whisking continuously, and bring the mixture to a gentle boil. Cook for 3-4 minutes until slightly thickened.

Step 9

Remove the saucepan from the heat and stir in the vanilla extract and salt. Let cool for a few minutes.

Step 10

To serve, drizzle the caramel sauce over the warm fritters and dust with powdered sugar.
